Veggie Noodle Stir Fry Recipe | HelloFresh

A stir fry has to be one of the easiest and quickest meals available.  This one happens to be chicken but you can use steak or else go vegetarian.


  • 200g noodles (serves 4)
  • 3 chicken breasts – thin sliced
  • 1 tsp five spice
  • 1 sliced red pepper
  • 1 sliced green pepper
  • 1 small chopped chilli (optional)
  • 100g stemmed broccoli or mange tout
  • 100g sliced mushrooms
  • 1 bunch spring onions
  • 3 crushed cloves garlic
  • 1 inch root ginger chopped – or ginger paste
  • 2 tbs soy sauce
  • 2 tbs sherry or rice wine (or black bean sauce)
  • several tbs sunflower oil
  • salt and pepper


  • Prepare noodles as per packet instructions and strain them
  • sprinkle chicken with five spice
  • fry in a wok for 6-8 mins approx. or until cooked through, and set aside
  • fry prepared vegetables including garlic and ginger but not onions for 2-3  mins
  • add onions and cook for another 2-3 mins
  • add soy sauce and sherry and heat through
  • season to taste – don’t add salt until this stage because soy can be salty on its own
  • return chicken to heat through
  • either add the noodles to the mix or else place noodles into the individual serving bowls and pour your veg and chicken over top


  • Use any mix of vegetables that you have to hand,  or else use a prepared pack of stir fry veg from a supermarket if they are available.
  • replace chicken with thin strips of steak or else cashew nuts or tofu cubes
