So we are in lockdown and it was suggested to me that many people who don’t usually cook will be wondering how they will eat well. Try this recipe for Falafel. The easiest of cooking!
Falafel (serves 4)
Ingredients:2 x 400gm cans chick peas (or equivalent)
- 120 grms flour (any sort – gf or wheat)
- Salt and pepper
- 1 large tsp cumin (I use 2 tsps – because I like spice!)
- 1 tsp ground coriander (optional)
- 1 tsp hot pepper sauce
2 tbs lemon juice
- 1 red onion (chopped – optional)
- Garlic (amount to suit tastes – I use a lot!)
- Parsley or mixed herbs (optional)
this can be spicy for some. I like the crunchy texture that the onion brings but you may want to reduce the hot pepper sauce if you have onion – or not if you like spicy!
Method
- Mash (drained) chick peas with everything except the flour until smooth
- Add flour to make a dough.
- Shape into small patties if cooking in a frying pan, or balls if deeper frying (about 24)
- Cook flat patties on a griddle or in a frying pan (use a small amount of olive oil to prevent sticking) on both sides. I cook mine as falafel balls in a wok. Which ever method cook then until they are golden brown
- Serve with pitta bread and green salad and a dip (I like one made with yoghurt, mayo and mint but its down to personal preference).
- Just plain mayo works, or chilli dipping sauce will work. Flat breads in place of pitta; or just the salad; of just falafel on their own. The world is your oyster! But above all else, enjoy!
